The beans took over 6 hours to cook, but well worth the time spent. I didn't have sherry, sour cream, or green onion on hand but the soup turned out great. Place beans and remaining ingredients in large slow cooker. Cover and cook on high for 4 hours then reduce to low and continue cooking another 6 to 8 hours. Mash beans with potato masher to get a nice consistency. Add the beans and 1 cup of the stock and bring to a boil. Reduce the heat to medium-low and simmer for 8 minutes.
